About Nikko and Nikko's Bread
I was originally inspired to make sourdough after the Netflix series by Michael Pollan called Cooked. The episode "Air," about bread, was particularly moving. Pollen describes how some breads in the store have 30+ ingredients, but sourdough only has three: flour, water, and salt. I felt the need to know how to make sourdough for my own consumption was incredibly important. At the time, I was also living on a farm in Missouri where all things were sustainable so sourdough baking fit into the repertoire of appropriate skills to master. For three years, Kesh (if you don't know Kesh, check out his website Inyourpot.com to learn more about his cooking wizardry) was my guinea pig trying all of the misshapen, funky, dense, super airy, uniquely-experimental breads. These were fun times because I never knew what would come out of the oven. Experimentation was the best part! After three years of learning sourdough baking I came up with what I thought was the tastiest loaf possible that could also be made consistently. This was for Kesh, guests, and volunteers at the farm. (This loaf is available for sale and it is known as the "Original Sourdough.")
The business side started after I posted some delicious looking bread pictures on Facebook. I took my first orders for four breads on October 18th, 2018. Friends and people within the Cape Girardeau (a small town in Missouri) community quickly responded and the next day I had 6 loaves ordered! The demand continued and each day I produced more loaves. By January 1st, 2019, approximately 2 1/2 months after my first sale, I have made 60 loaves per day with back orders!
